RECIPE FOR THE ZUIDLAREN BUN
The original recipe of the Zuidlaren bun is of course a closely-kept
secret, but we have given below the recipe for a delicious filled Drenthe
bun.
Ingredients:
400 grams of patent flour
150 grams of rye flour
225 ml of lukewarm water
45 grams of yeast
25 grams of milk powder
50 grams of butter
10 grams of salt
300 grams of currants
300 grams of raisins
30 grams of candied fruit (optional)
Recipe for 2 buns:
- Mix the ingredients (without the currants, raisins and candied fruit)
in the kitchen machine or food processor until a smooth, firm dough
is obtained.
- Then knead the filling into the dough. (All at room temperature.)
- Leave the dough to rise for 20 minutes and then knead it lightly once
again and make two round balls.
- Cut the edge with a sharp knife and press the ball flat.
- Leave the bun to rise for another 45 minutes, preheat the oven to
200 degrees and bake the bun for 40 minutes until it is cooked through
and brown. Prick the bun with a knitting needle. If the needle comes
out clean, the bun is cooked through.
